Local, Sustainable, Responsible, these three words are at the forefront of the culinary industry. In 2009 they also became a way of Life for Chef Stauffer. That is the year he joined Bon Appetit as an Executive Chef and made them a priority in his culinary career. Focusing on forming personal relationships with local farmers and artisans, Chef Stauffer dedicated his efforts to providing a fresh approach to University and Culinary Dining Services.
Chef Stauffer’s training includes a Culinary degree from The University of Pennsylvania Academy of Culinary Arts, A Baking/Pastry Degree from the same University, and continuing education programs in both Italy and Switzerland. Donald is certified in Nutrition and Supervisory Management and has also completed training programs in various management, administration and human resources programs.
Having completed his apprenticeship at the Coeur D’Alene Resort in Northern Idaho, Chef Stauffer has worked throughout the country but has been routed mostly in Ohio and Pennsylvania. He served as the Banquet Chef for Hershey Entertainment and Resorts where Chef Stauffer learned to bring both his culinary training and his baking expertise together. He has formally served as Sous Chef for The William Penn Inn, the oldest continuously run Inn in Pennsylvania, which also had a full service fine dining restaurant which served more than 300,000 guests annually. Chef Stauffer served as Executive Chef for Villanova University for two years before joining Bon Appetit. While at Villanova Chef Stauffer also had the opportunity to serve as Guest Chef at the University of Massachusetts. His resume includes cooking for multiple celebrities, music artists, sports figures, political and religious leaders. Donald’s travels also allowed him to act as culinary support for one Olympic venue.
Donald is an ACF Certified Executive Chef. Chef Stauffer is also a 4 time ACF Competition medalist, holding 2 bronze, 1 silver and 1 gold medal. He has placed second 2 times and first once in the National Associate of College and University Food Services Regional Competition, as well as competed once in their National Competition. He has two second place awards from The Hershey Resorts Chocolate Fest Cake Competition. His service to Hershey Entertainment also brought him their “Leader of the Quarter Award” for distinguished leadership and staff motivation.
Chef Stauffer’s culinary philosophy is, “Food should come from traditional values teamed with cultural acceptance, from community partners and produced by positive, empowered cooks.”
