Spreading Roots: Cafe Expanding to Old Gilmore's Building

West Chester's Roots Cafe will add a new location, and a dinner menu, in June.

 

Roots Café is expanding to a bigger space, and a broader array of menu options, this summer, but the Gay Street coffee house isn’t going to compromise the snug, comfy atmosphere that’s come to define it.

According to West Chester Dish, in June, Roots will add a new location at 133 East Gay Street, taking over the building that used to house Gilmore’s Restaurant.

Owner Dan Cellucci told the publication that the forthcoming BYOB will have a 35-seat backyard patio and will serve breakfast and lunch on Thursday through Sunday. And the café is adding an exciting new twist to its repertoire too: on Thursday, Friday, and Saturday, Roots will serve dinner.

“We realized we needed to grow to ever be able to do this. The opportunity came and we took it,” Cellucci said. “A bigger space to hold more people allows us to really shine a bit more. It will hopefully show people we love what we do and we’re serious about what we do.”
